À volta do bacalhau coloca-se o preparado de puré de batata. Espalha-se a maionese por cima do bacalhau, coloca-se as restantes rodelas de cebola e o tomate cortado aos cubinhos e as tirinhas de pimento. Rega-se com um fio de azeite. Leva-se ao fogo em banho-maria sem deixar ferver, e até que a manteiga e o açúcar estejam derretidos.&lt;br /&gt;à parte batem-se muito bem os ovos inteiros que se juntam cuidadosamente ao preparado anterior, fazendo-os passar por um coador de  rede à medida que se vai mexendo para os ovos não cozinharem. Depois coze cerca de 10 minutos sempre a mexer até ter a consistência pretendida. Depois de esfriar o creme fica ainda mais espesso e mais esbranquiçado.&lt;br /&gt;Guardar em frasco esterilizado. Colocar o preparado no frasco, tapar e voltar o frasco ao contrário para criar efeito de vácuo. Deixar arrefecer totalmente e depois guarda-se no frigorífico. Rega-se a caldeirada com esta mistura. Tempera-se com um pouco de sal, dispõem-se os raminhos de hortelã e de salsa por cima e vai a cozinhar em lume brando. Após a fervura, a caldeirada deve cozinhar mais cerca de 15 minutos. Coloca-se num recipiente a farinha, o ovo inteiro, o azeite, a salsa picadinha e por fim a agua morna com o fermento e sal dissolvidos. Amassa-se com a mão muito bem, até todos os ingredientes estarem envolvidos e  a massa formar uma bola. Deixa-se ficar a repousar no recipiente e cobre-se com um pano , pelo menos uma hora. Juntar o cacau e adicionar a manteiga derretida no microondas até obter uma massa esfarelada. Dividir o creme em duas partes e misturar numa delas o chocolate derretido. Verter o creme branco sobre a base de bolacha e alisar a superfície, sobrepor depois o creme de chocolate e com um garfo misturar fazendo efeito de marmoreado. Do ponto de uma calda está entre um doce perfeito ou um desastre completo.&lt;br /&gt;&lt;br /&gt;Para determinar o ponto de açúcar pode ser usado:&lt;br /&gt;- pesa-xaropes - graduado em &lt;a href="http://pt.wikipedia.org/wiki/Baum%C3%A9"&gt;graus de Baumé&lt;/a&gt; (Be), determina a densidade de sais de uma solução;&lt;br /&gt;- termómetro - analógico, digital, infravermelhos... resistente a temperaturas até 150ºC, determina, obviamente, a temperatura;&lt;br /&gt;- aspecto físico da calda, determina a sua consistência.&lt;br /&gt;&lt;br /&gt;Uso um termómetro graduado até 200ºC ou um de infravermelhos até 350ºC, é mais rápido, prático e certeiro.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Ponto de pasta&lt;/span&gt; Junte a beringela cortada em tiras finas e deixe apurar. Coloque num recipiente que possa ir ao forno, salpique com queijo e coloque os ovos por cima (crus). Leve ao forno a gratinar. Pode ser servida em tostas como entrada ou pode ser servida como prato principal. &lt;/div&gt;Em alternativa, pode fritar as tiras de beringela em azeite e alternar com o molho de tomate, que é feito à parte.&lt;br /&gt;&lt;br /&gt;Nota: Antes de ser cozinhada a beringela deve ficar durante 1h salpicada com sal grosso, até que saia o líquido que lhe dá o sabor amargo. Leve ao frigorífico por alguns minutos, estenda a massa com o rolo e faça bolachas com cortadores próprios. Se quiser pode depois decorá-los com corantes, banhar com chocolate ou servir simples. Untar com manteiga e polvilhar com farinha, uma forma redonda (20 cm).&lt;br /&gt;&lt;br /&gt;Num recipiente, juntar o chocolate em pó e café, adicionar a água quente e mexer até dissolver. Adicionar o whisky e o sal. Deixar arrefecer completamente.&lt;br /&gt;&lt;br /&gt;Partir o chocolate em pedacinhos, derrete-lo em banho-maria ou no microondas. Deixar arrefecer.&lt;br /&gt;&lt;br /&gt;Com a batedeira eléctrica, bater a manteiga com o açúcar. Juntar os ovos, batendo entre cada adição. Adicionar o chocolate derretido e o açúcar baunilhado, bater bem.&lt;br /&gt;&lt;br /&gt;Com a batedeira na velocidade lenta, juntar metade da mistura de café à massa do bolo. Posteriormente adicionar metade da farinha e do fermento (previamente peneirados), misturar bem.&lt;br /&gt;&lt;br /&gt;Finalmente, adicionar a restante mistura de café e a restante farinha. Escorrrem-se e pesam-se. Os meus pesavam nesta altura 1kg. Levam-se ao lume num tacho de fundo grosso e deixam-se murchar e cozer durante mais ou menos 10 minutos ( não juntar água). Se pretender um doce todo moído é agora que deve passar na varinha mágica ou no liquidificador. Junta-se então o açúcar (800g por quilo), os paus de canela, os cravinhos e o sumo do limão. Deixa-se cozinhar em forno baixo durante cerca de 1hora.&lt;br /&gt;Para ver quando está pronto, tire um pouco para um prato deixe arrefecer um pouco e veja se abre uma estradinha ao passar a ponta do dedo através dele (esse será o ponto de estrada essencial para o doce se conservar e ficar bem), aí está pronto!&lt;br /&gt;Quando estiver pronto pôr em frascos previamente esterilizados em água a ferver durante 10 minutos. Os frascos devem estar completamente secos quando verter o doce. Deixe arrefecer. Limpe os bordos do frasco e cole na sua superfície uma película de filme de cozinha para não deixar ficar ar.
